Slow Cooker Filipino Chicken Soup (Arroz Caldo)

When you’re sick and can’t really move enough to cook your own meal but have a slow cooker then you’re in luck. There is no suffering since you’ll be leaving it in the slow cooker until it’s ready to eat.

What’s in it:

  • Rice, 4 c
  • Water, 7-8 c
  • Fish sauce, 2 tbsp
  • Chicken wings, 8 pcs
  • Garlic, crushed
  • Ginger, jullienned
  • Scallions, chopped
  • Chicken broth cube
  • Pepper

Start heating the slow cooker and start cooking the garlic and chicken until the meat is cooked. Add pepper and mix with the chicken. Add the rice, chicken broth cube, water and fish sauce. Mix well before leaving it to cook. Once the rice is cooked, adjust with water until you reach your desired thickness.

Commonly used condiments are fish sauce, pepper, calamansi or lemon juice, and scallions for added flavor and garnish.
