There are lots of meal preps out there that make use of the muffin tin. Definitely thinking outside of the box and not limiting yourself to baking only muffins with it. This recipe is quite versatile as it uses basic ingredients and is flexible enough for you to add more or take off ingredients as you please.
What’s in it:
- Salsa (medium heat)
To fit the tortilla into the cups of the muffin tin, fold and press the rim onto the wall of the cup to get the shape. Add a spoonfull of sauce, crack an egg over it and season with salt and pepper, and top with cheese. Bake until the egg is cooked to your liking.
This is probably the shortest list you’ve ever seen in any of my posts. It is also wallet friendly so don’t worry about buying a lot of stuff in the grocery but only be concerned about how much you need for how many people you are cooking for.
Other options are to add bacon, vegetables, ground beef, sausages, sour cream and many more. In this recipe I baked 6 cups with cheese and 6 cups without. I was full at 3 cups already and probably could have pushed to 4. However, the rest were eaten the next day at work and left just as satisfied the night before.
