Surprisingly, a workmate of mine who is also pinoy brought the same meal to work with slight variations. While his was smokey, mine was sweet and spicy but of ocourse both served with Sinangag (garlic fried rice). In this post, I’ll be introducing you to my version.
What’s in it:
- Pork belly
- Soy sauce
- Lemon
- Brown sugar
- Chili pepper flakes
- Chili
- Pepper
- Garlic
Thoroughly mix all dry and liquid ingredients except for the meat in a bowl tasting the sourness, sweetness and saltiness until desired taste. Add the pork belly and leave it to marinate for a minimum of 15 minutes. Once the grill pan or grill is hot, start cooking the meat using the marinate for basting as you flip it over.
It’s a diverse mix of flavors with just one bite. The rice will help with the heat of the marinade.
