I remember food shopping with my mom and how she would always pick-up a jar of feta cheese in olive oil or her cottage cheese and yogurt combo. I decided to incorporate this into my diet since I’m concentrating on having more fruits and veggies than meat.
I made my own version of marinated feta cheese and has now been sitting on the counter-top for almost a week now. Since I’m transferring stores, I thought I would leave some of these jars as my going away present for my colleagues and also oven-bake some baguettes to go with it.
Another cheese that I’ve befriended is cottage cheese which I can have as it is or as a dip for celery sticks, or served on top of tomato slices, or topped on a piece of toast, or together with spinach lasagna.
But the best part of this cheese fest is that I finally have my Queso de Bola that I had my sister bring back from Manila. I’ve waited for so long, years in fact, to re-live precious moments.
